Sweet Potato Ice Pops

Like many parents, I’ve been having a problem getting veggies into my 2 year old for a while now. I’ve tried recipes out of the Jessica Seinfield book, and other similar cookbooks, but my son is really picky about textures right now, AND he’s not interested in trying anything new. It could be the most delicious thing in the world, and if he hasn’t seen it before, he won’t eat it.

SO, I figured I would try to get some veggies into his favorite afternoon snack. Ice pops! I bought some molds at Bed Bath & Beyond, and started with pouring V8 V-fusion’s Strawberry Banana juice into the mold and freezing them. He loves those. He likes straight orange juice too. Then I tried pureeing fresh mango. He likes the flavor, but my little texture man didn’t care for the consistency. I’ll mix it with mango or pineapple juice next time so it’s not as thick.

My absolute favorite to make him is sweet potato and apple ice pops. He loves these the most. I use one jar of sweet potato baby food puree (you can cook, mash and puree your own if you’d prefer) mixed with apple juice. I filled an ice pop mold with water and poured into a measure cup (multiply by how ever many molds you have) to judge how much apple juice I needed to fill 10 molds. Puree the two ingredients in the blender, fill the mold and freeze!
