Longwood Park is one of my favorite parks to take the kids. The playground equipment is some of the nicest I’ve seen around here. The large “castle” playground for 6 to 12 year olds is fun to play on, and the best part is that it’s all sheltered from the sun, under a huge, blue, canopy. As of May 2009, they installed a new state-of-the-art prototype playground for children aged 2 to 5. 96% of the solar radiation is blocked by the Apollo shade system, while the children are protected against accidental falls by the Softile safety surfacing. Not many people I’ve met know about Locklear Park. I think it’s relatively new, and I can barely find it in a google search. Plus, you can’t get to it by driving on Lockwood Ridge Road. Move over Laurie Berkner…we’ve got another favorite in the house!  I accidentally came across The Sippy Cups in search of new music for Myles. If you dig alternative rock, these two albums are rockin’! (The Time Machine 6/2009 and Electric Storyland 2006)

Heather’s Vegetable Spaghetti sauce

Ingredients
1 28 oz. jar of fire roasted tomatoes or regular tomatoes
1 zucchini chopped
1 small onion chopped
1 clove of garlic chopped
1 cup of button mushrooms chopped
1 carrot chopped
a handful of basil leaves chopped
olive oil

Instructions
1.    Pour olive oil into a saute pan and turn temperature to medium heat.
2.    Add the chopped onion and carrots and saute for 2 minutes
3.    Add the zucchini, garlic, and mushrooms and cook for 2 minutes
4.    Reduce the heat to low/simmer and add the can of roasted tomatoes
5.    Cover the pan and cook for 20 minutes on simmer/low.
6.    Add the chopped basil leaves and mix well with vegetables cook for 2 more minutes
7.    Pour the vegetables into a blender and puree.

Serve with your favorite pasta or use it as a dipping sauce for chicken fingers.
